Profile

Smell

The pine hops are here to stay and they will not give up the ghost. Deep sniffs will pick up the light aroma of muddled tropical fruit but the hops crowd most of it out.

Taste

This one has some KICK. Not only will you taste a strong hop profile but the booze in this one is just too high to completely mask. The hops do a nice job of evolving on the palate, opening up as they warm on the tongue. Pine flavour gets juiced with some herbal and earthy qualities. The fruity flavours are hiding around the edges but mostly they keep the strong hops fenced in.

Pairing

Get into some spicy curry or Thai dishes that can hold their own against the hops.

Sight

Pours a beautiful golden colour with a slightly hazy body and low carbonation. A frothy head of gold tinted foam stands on top of the glass.

Description

Scott Vaccaro founded the Captain Lawrence Brewing Company in 2006, a short drive north from New York City. The Captain is the area’s largest craft brewery, producing over 28,000 barrels of beer annually. Now the brewery produces over 100 different beers every year and specializes in barrel-aged and sour beers. With this much beer under their belts, it only made sense to erect their own 2500 square foot beer hall and massive beer garden. If you’re in the northern part of New York State and you need to find a place that will serve you and 400 of your closest friends, then you need look no further than the Captain Lawrence Brewing Company. The Pacific Dawn is a Double IPA, meaning it has big hop flavours of pine and herbs, and a level of alcohol that might have you ordering some nachos. Serves well at 8°C and can cellar for a few months but should be enjoyed soonish.
